Gdje se rizik zapravo nalazi
Istraživanje kontaminacije [1][2] dosljedno ukazuje na uslugu hrane, a ne na proizvodnju. Certificirani proizvođači testiraju; kuhinja na servisnoj stanici u jedanaest navečer ne može. Dijeljene površine, dijeljeno ulje, zrakom preneseno brašno i visoka fluktuacija osoblja svi rade protiv održavanja protokola.
To preokreće instinkt koji mnogi novodijagnosticirani ljudi imaju. Zapečaćena, certificirana pakirana stavka je pouzdanija od toplog obroka koji je netko opisao kao bezglutenski, a nije bio prisutan kada je kuhan.
