Glutenvrij eten tijdens lange rit
Besmetting in de voedselvoorziening is meetbaar, gebruikelijk en geconcentreerd op voorspelbare plaatsen. Dat maakt het beheersbaar in plaats van beangstigend.
Waar het risico daadwerkelijk is
Samengevoegd onderzoek naar besmetting [1][2] wijst consistent op de voedselvoorziening in plaats van op de productie. Gecertificeerde fabrikanten testen; een keuken van een tankstation om elf uur 's avonds kan dat niet. Gedeelde oppervlakken, gedeelde olie, zwevende bloem en een hoge personeelsverloop werken allemaal tegen een duurzaam protocol.
Dat draait de instinctieve gedachte om van veel recent gediagnosticeerde mensen. Een verzegeld, gecertificeerd verpakt item is betrouwbaarder dan een warme maaltijd die als glutenvrij wordt beschreven door iemand die er niet bij was toen het werd gekookt.

Wat mee te nemen
Het eerlijke advies voor een lange rit is om het meeste mee te nemen van wat je gaat eten. Niet omdat niets veilig is, maar omdat je opties scherp afnemen buiten normale uren, en honger is een slechte onderhandelaar. Een koelbox met verzegeld voedsel verwijdert het hele probleem van de reis.
