Lo que la ley te otorga
En toda la UE, la información sobre los catorce alérgenos principales debe estar disponible para alimentos no envasados vendidos en el servicio de alimentos. Puede proporcionarse verbalmente en lugar de por escrito, pero debe estar disponible y ser precisa. Tienes derecho a preguntar y a obtener una respuesta.
La brecha es el conocimiento, no la ley. Una revisión sistemática y meta-regresión del conocimiento sobre alergias alimentarias entre el personal de servicio de alimentos [2] documenta cuán variable es ese conocimiento, lo que explica por qué la formulación de la pregunta es tan importante.

Cómo ocurren realmente las reacciones
La revisión de reacciones alérgicas inesperadas [3] encuentra que el patrón rara vez es imprudente. Es un plato cambiado desde la última vez, un adorno que nadie mencionó, un utensilio compartido, un miembro del personal que realmente no sabía, o una barrera lingüística.
- Nombra el alérgeno, no la dieta. "Soy alérgico a los cacahuetes" es accionable. "Tengo alergias" no lo es.
- Di lo que sucede. El personal se comporta de manera diferente cuando entiende que la consecuencia es una ambulancia.
- Pregunta sobre la superficie de preparación y la freidora, no solo sobre los ingredientes.
- Consíguelo por escrito donde puedas, o usa una tarjeta de traducción en el extranjero.
- Vuelve a preguntar en cada visita. Las recetas cambian y el personal rota.
En el extranjero
